An {Almost} Spring Weekend in Denver

Hi, friends! Today I’m so excited to share a few favorite moments from a traditionally spring weekend here in Colorado, including breakfast in Louisville, a trip to the Denver Zoo, and an afternoon sweet treat in the sun. This was the fist warm weekend we’ve had since winter started here in Colorado! And while I know there are still plenty of more cold days on our horizon, there’s nothing like a warm sunny day to remind you that spring is on its way! So I’ve lovingly dubbed this adventure of ours an “almost Spring” weekend here in Denver.

First things first! No weekend adventure in Denver starts without a brunch stop, and our favorite places just happen to be in Louisville (a quick 20 minute trip from Boulder). While we usually head to The Huckleberry for breakfast, we got a bit of a late start and the line was out the door. So instead we decided to head on over to Moxie Bread Co. for a quicker albeit just as tasty breakfast! Moxie Bread Co. has such a unique eccentric vibe–I love it! And it’s actually built inside a historic Louisville home. Just take a look at the inside of the place in the photos below!

For brunch, Allen got the Il Supremo sandwich, which has hot capicola, prosciutto, smoked mozzarella, red peppers, onions, Sicilian oil, and greens, all stacked between two warm pieces of homemade french bread–yum! As for me,  I got the avocado toast and a warm vanilla latte. Everything was so good.

We also love their Chicken Salad sandwich (I seriously have dreams about that thing…) and their delicious pastries. So if you ever drop by Louisville for brunch, you really can’t go wrong with this spot!

Moxie Bread Co. is just such a cool place to take a moment to sit down and relax. I loved the little raccoon doll photobombing Allen below! Haha! So many little trinkets to look at.

This was the first day here in Boulder/Denver that felt like Spring was actually on its way. So I took full advantage by bringing out a lightweight, breezy tunic and all the blush pink accessories.

After breakfast in Louisville, we headed into the downtown area. Allen wanted to take a look at the original REI store in Denver for some gear, so we made a quick pit stop there on our way to the Zoo. It was our first time there and wow! was there so much to look at!

Allen has been on the hunt for a new bicycle helmet for a while now. So when he found this “Tony the Tiger”-inspired one, we had to just laugh!

After our shopping adventures at REI, we headed on out to the Denver Zoo. Parking can be a real beast if you don’t get there early, so we ended up having to park a bit of a walk away. But it gave us a nice excuse to get some exercise in, especially with the sunshiny weather! Allen of course was intrigued by the cannons nearby and couldn’t help but make me laugh!

Finally made it to the Zoo! Such a pretty (nearly) spring day to be outside!

We actually came to the Zoo to see Dobby, a baby giraffe that was just born! But unfortunately we didn’t get to see him this time around–maybe next time! The other giraffes were happily enjoying their Saturday munchies though and were lots of fun to watch.

Next up, the wild horses! These guys were a little sleepy and were taking a casual mid-afternoon nap. I can totally relate…

Also really love the elephants! The last time we went to the Zoo, we learned that elephants apparently love to play in the water and are incredible swimmers. So they have a new favorite place in my heart!

We even got to see an elephant walk over the bridge–so cool!

Taking a quick break to snap some pictures of my outfit. I had originally brought an open weave cardigan to cover up with if I got cold, but ended up leaving it in the car. It was much too nice to need it! I also always travel with an easy panama hat to keep the sun off of my face and a cute pair of sunglasses too. Next up we visited the rhinos–Allen’s absolute favorite! He was totally mesmerized for at least 30 minutes.

And the hippo even made an appearance on our visit. Just look at those teeth–yikes!

And no visit to the Denver Zoo is complete without seeing the brown bears. They are usually pretty active, and this particular day this little guy was busy eating an afternoon snack of jerky.

Meanwhile, the cheetahs were just taking a lazy cat nap…Can you blame them?! The weather was just spectacular.

Now I mentioned that we originally went to the Zoo to see Dobby the baby giraffe. And while we didn’t get to meet him on this trip, we did get to see Whimsie!!! I don’t know if you remember, but this exact time last year, Whimsie was born and we got to see her then (picture in this post). So getting to see her on this trip was such a treat and definitely a highlight for me. (I’m pretty sure I spent an hour alone just in the gorilla area–thanks for being so patient Allen!).

After finishing up at the Zoo, we definitely had a hankering for something sweet and refreshing on such a warm spring day. So we headed to Sweet Cooie’s for ice cream cones on the patio. It was our first time there and we instantly fell in love with its updated 50’s charm.

I got the Bananas Foster ice cream and Allen tried the Raspberry Peach sorbet. Both were insanely good. And made even better by sitting outside in the warm sunshine.

Afterwards, we drove back to Boulder and enjoyed the rest of our evening at home, curled up on the couch with a good movie. What a perfect almost Spring weekend here in Colorado! Lots of good food and sunshine–two of our very favorite things!
